I think Jack farted when Jack's dad was about to shoot the deer because as it said in the book Jack thought the deer was beautiful and he may not have wanted to see or hear the deer cry as it was being shot. Or maybe he thought that since the deer had done nothing to hurt anyone it would be horrible to kill it for doing nothing harmful.
